These waffles smell AMAZING while they cook. It smells just like Fall.
In a medium size bowl add all wet ingredients: water, milk, oil, applesauce, syrup, flaxseed meal, and vanilla. Whisk by hand until it is well combined (about 30-45 sec).
Set aside while you prep the apple.
Peel apple then slice up and remove core. Place in a food processor and chop until it is finely diced. Set aside in fridge for later.
Add all dry ingredients to a large mixing bowl : gf flour, cinnamon, baking powder, baking soda, xanthan, and salt. Whisk together until it's fully blended.
Slowly pour wet ingredients into the dry while whisking the batter. Or pour a small amount, whisk, pour some more, whisk, etc. Mix until combined. The batter will be fairly thick.
Stir in diced apple.
Preheat your waffle maker. When it's ready, spray with cooking oil. I tried brushing mine with olive oil and it did NOT work, the waffle got completely stuck to the iron. I had to use a cooking spray instead (I normally try to avoid it because I can't find one without soy lecithin).
Add enough batter to fill the waffle iron, then close and cook according to your waffle maker instructions. Mine took about 6-7 minutes to fully cook.
Open up the iron, use a fork to remove the waffle and place it inside a folded up towel. Repeat with remaining batter. Then feast!
If you have any extra, these freeze and reheat well.
