Easy & tasty fajita rice bowl.

 2 Chicken breasts, cooked and shredded
 1 tbsp Olive oil
 1 Medium onion, diced
 1 cup Red & orange mini bell peppers, chopped
 Low Histamine Fajita seasoning, recipe link below
 3 cups Cooked Rice
 1 Bunch cilantro, washed

Pour olive oil in a skillet on medium heat. When heated, add onions and peppers and saute for 2-3 min.

Add cooked chicken and stir. Add fajita seasoning and 1 TB of water or oil. Stir in seasoning and let simmer with lid for 3 min.

Serve over rice and garnish with cilantro.
