Place thawed chicken thighs in a greased baking dish. Preheat oven to 400° F.
Combine honey, oil, and cilantro in measuring cup with a whisk.
Pour honey mixture over the chicken thighs and place in the oven. Bake for 15-25 min or until chicken reaches 165° F.
While the chicken cooks, wash and chop veggies. Toss them with olive oil, salt, garlic powder, and onion powder. Place them on a cookie sheet covered with parchment paper. Roast in the oven at 400° for 10-15 min, or until the tops are slightly browned and veggies are tender.
