Low Histamine Turkey Tacos

These tasty tacos are also gluten free and dairy free!

 1 lb ground turkey
 ½ tsp salt
 1 tsp paprika
 1 ½ tsp onion powder
 1 ½ tsp garlic powder
 ½ cup lettuce, shredded
 ¼ white onion
 1 medium zucchini
 1 red pepper
 corn tortillas
Histamine Level: 1
 Rated a 1 due to the garlic. Also dried spices are higher histamine than fresh, so you may want to use minced garlic and minced onion in place of powder.
 Variation: you could also eat this as a lettuce wrap or on top of salad.

Brown ground turkey in a frying pan with seasonings until it reaches 165° F.

Tip: Buy 6 lbs of ground turkey and brown it all at once, then freeze it in sandwich bags for quick use later.

While the turkey cooks, dice zucchini, onion, and pepper. Then shred the lettuce.

Stir fry veggies (except lettuce) in a large frying pan with 1-2 tbsp of olive oil. Cook for 5-7 minutes, stirring occasionally. When they are tender to your liking, put them in a bowl and set aside.

Wipe out the frying pan and pour another 1-2 tbsp of olive oil into it. Over medium heat warm 2-3 corn tortillas in the oil. Cook about 3-4 minutes on each side, or until they get some brown spots. Set tortillas on a paper towel on a plate. Continue with remaining tortillas.

Assemble tacos by starting with turkey, a layer of veggies, and top with shredded lettuce. Drizzle some olive oil over the top and sprinkle some italian seasoning and salt to taste.
