Low Histamine Nomato Sauce

Serve over zoodles or GF noodles. I've also used it as pizza sauce and a base for sloppy joes.

 ½ medium onion, roughly chopped
 30 oz canned sliced carrots, drained
 15 oz canned slice beets, reserve liquid
 2 tsp minced garlic
 1 ½ tbsp italian seasoning
 1 tbsp olive oil
 1 bay leaf
 ¼ cup distilled white vinegar
Histamine Level: 1
 Rated a 1 due to the canned veggies.
 Use fresh beets & carrots for level 0 histamine.

In a blender, place in order: onions, carrots, beets, garlic & vinegar. Add 1/4 to 1/2 can of the beets liquid.
Blend until smooth.

Pour puree into a skillet.

Stir in olive oil & bay leaf.

Cover and cook until the sauce begins to boil. Remove lid and reduce heat to low. Simmer for at least 30 minutes.
Remove bay leaf.

Freeze extra sauce.
