A great on-the-go snack and also satisfies a craving for a sweet treat!

 6 cups dry cereal (Mix of Rice Chex, Corn Chex, Crispix, Kix)
  cup smart balance margarine (or butter)
 ¼ cup honey
 1 tsp cinnamon
Histamine Level: 1
 Rated a 1 due to the smart balance.
 For histamine level:0 replace margarine with 1/4 of extra light tasting olive oil

Preheat oven to 350 F. Grease a baking sheet or line it with parchment paper.

In a large bowl mix together the dry cereal and cinnamon. My favorite ratio is 2 c. crispix, 2 c, Kix, and 1 cup each of Rice & Corn chex

In a microwave safe bowl combine honey and margarine, then microwave for 30 sec, take out & whisk until well blended, microwave another 30 sec if needed.

Pour the liquid mixture over the dry cereal and stir until coated.

Spread onto pan in a single layer and bake for 10-14 minutes, until mixture is lightly glazed, stirring occasionally.

Cool in pan for 3 min; remove from pan and spread on waxed paper to cool completely. Store in an airtight container. Stays fresh tasting for at least a week (mine is always eaten before the week is over).

Salty Chex Mix

To make salty seasoned chex mix use:
6 c. dry cereal
1/4c. extra light tasting olive oil
1/4 tsp garlic powder
1/4 tsp onion powder
1/8 tsp salt

Histamine Level:1 due to the garlic powder. Omit for histamine level: 0.

I was typing this with one hand while breastfeeding Rosie, because whenever I start a project or try to eat a meal, she comes crawling over! Babies must have a sixth sense for when a mom is sitting down to eat and they decide they need to eat right then too. 

This is a great on-the-go snack and also satisfies a craving for a sweet treat! If you can eat nuts they would be delicious to add in (macadamia nuts & pistachios are lowest histamine nuts). Use 5 cups of cereal and 1 cup of nuts, or whatever ratio you like, have fun with it!
