delicious twist on classic breakfast burritos
Yields: 2 small breakfast burritos
Nurture My Gut: GF, DF Flour Tortillas
-I use Petite allergy treats basic white flour blend
Wash off your potato and poke it several times with a fork. Microwave for 2-3 minutes or until soft. Set aside to cool.
While the potato is cooking, slice & dice the zucchini, peppers, and onions. Then slice & quarter the potato. Wash the cilantro, cut off the stems and set it aside for garnish.
Heat a frying pan with a bit of olive oil over medium heat, then add the veggies & potato. Season to taste. Sauté for about 5 min or until veggies are soft. Then remove from heat.
If frozen, warm up the tortillas and the chicken sausage on the stove or in the microwave. Be careful not to warm the tortillas for too long, they have a tendency to get stiff if you do. When I warm them on the stove I do it on high heat with a lid covering it, so it's a quick warm-up. It takes about 8-10 seconds in the microwave.
Stir the sausage into the veggie mixture.
Add the veggies & meat to the tortillas and top with cilantro. Add nacho sauce for a cheesy burrito, bbq sauce for savory, or salsa for a mexican style.
I usually make these burritos when my freezer is stocked with tortillas & chicken sausage & sauce. Then it's SUPER easy to whip together and it tastes so yummy. I'm a big fan of breakfast food- I'll eat it any time of day 🙂
It will take a lot longer to make this recipe if you don't have tortillas or chicken sausage already made.
Note about Tortillas: I recently got a new tortilla press for around $22 and I am glad I did! Rolling out the flour tortillas is kind of a hassle and it prevents me from making them more often. But this tortilla press definitely makes it easier! I kind of wish I got a bigger press, because I like big tacos, but it cost a lot more money. Plus the smaller size is better for Rosie. She likes to eat them spread with macadamia nut butter and cut into pizza slices. I like to eat them with macadamia nut butter and blackberry jam 🙂
