Enjoy soft & sticky caramel popcorn with your favorite movie!
Pop the popcorn kernels using an air popper into a large bowl.
To separate the popcorn from the un-popped kernels, move the popcorn by the handful into a second large bowl.
In a medium/large microwave safe bowl, combine marshmallows, brown sugar, and margarine.
Place in the microwave for 30 seconds, then stir. Marshmallows will expand and then melt.
Repeat this until the marshmallows are all melted and the mixture is more of a golden brown (about 4 times).
Pour caramel mixture over the popcorn and stir until it's evenly coated. Feast!
For creamier & thicker caramel, double the margarine, brown sugar, and marshmallows but leave the amount of popcorn the same.
This is my favorite quick dessert. It's so soft & gooey and caramel-y. I can't find anything to see if marshmallows are officially low histamine, but they don't seem to bother Rosie thankfully! This caramel also tastes delicious on macadamia "ice cream" (I'll be sharing that recipe later). Hope you enjoy!

I read all ovee the internet that popcorn is a histamine intolerance no, no. You say not?
I follow the SIGHI list, which has corn as a level 0 histamine, although not specifically about popcorn. That being said, every person tolerates different things and there are many people who avoid popcorn. If you haven’t tried it and you feel good about trialing it I would start with a very small amount of plain popcorn to start. You could also try purple/blue popcorn kernels as suggested by Healing Histamine. If you are on a very strict low histamine diet this caramel corn is probably not the best choice because most marshmallows are at least a level 1 histamine. 🙂
