a low histamine alternative to traditional bone broth and beef bouillon.
Wash veggies then cut them into chunks.
Turn instant pot onto sautee mode (for my instant pot I just push the meat button). Pour olive oil into the pot, then add the beef shank with bone, and brown on both sides (about 10 minutes).
Add all other ingredients to the pot. Then fill the pot with water until it reaches the max fill line.
Put the lid on, set the steam release knob to seal, and set the instant pot to Soup for 60 minutes.
When the 60 minutes is up, allow the cooker to sit for 15 minutes for it to slowly release pressure. After 15 minutes, turn the steam release knob to open to release the rest of the pressure (don't burn yourself on the steam).
Strain the beef broth into a large bowl or pot. Freeze in serving size portions. I like to freeze mine in 2 cup, 1 cup, 1/2 cup, & 1/4 cup servings.
Reheat in the microwave for 2-3 minutes or on a pan on the stove.
Using an instant pot makes it possible to immensely shorten the cooking time on bone broth, which helps keep it low histamine.
I started using this as an alternative to beef stock or broth that's called for in many recipes. Most beef bouillon or broth that's available at the store is not low histamine because it contains yeast extract and/or high histamine spices like pepper.
The first time I made this I didn't add any herbs and it tasted kind of bland. The good news is, I like to use it in stew, soup, or sauces, so I just add extra seasonings then. If you want to drink it by itself, then I would add the herbs.
Keep an eye out for the beef stew recipe made from this broth, it's coming soon!

How big is your instant pot? I got the smallest size (as I’m cooking for just myself) and I was wondering if I should cut this recipe down?
I’m not sure, but I think it’s an 8 qt. You could cut the recipe in half the first time you make it, just to be sure that it fits in your instant pot.
Excuse me, but couldn’t you look and see the size of the pot you are using, and the amount of water ???
That was a very good idea! Mine can hold 20 cups, so it’s a 5qt.
Thanks so much! XOX.
can u make it just in a pan if u havent got a slow cooker
I used an instant pot, but if you don’t have one, try following the same cooking procedure as this bone broth recipe from the Histamine Friendly Kitchen.
Celery is also high in histamines, so I suppose it must be excluded in order to qualify as low histtamne. Otherwise a good recipe
Thanks for sharing. I rate all my recipes according to the SIGHI list, and it rates celery as a zero histamine. Every list seems to have different opinions!
Hi is there a way i can do this without the instant pot? I don’t have one:( but really need a beef ( or anything but chicken because my baby is sensitive to it) low histamine broth as well!
Here’s how you can make this on a regular stovetop: Histamine Friendly Kitchen. This recipe cooks for 4 hours instead of the usual 8-12 hrs. Remember the longer it cooks on the stove, the higher the histamine levels go (which I believe Tania references in her recipe). You can use this same recipe and only use beef bones instead of beef & chicken. I usually buy a beef shank to make mine, but any beef bone you have would work.
Here’s a vegetable stock/broth option that you can also make on the stove.Just make sure to use low histamine veggies like carrots, white onions, celery, zucchini or peppers. If your baby tolerates garlic you can add that too. Omit the black peppercorn in this recipe as that is high histamine. I add herbs like thyme, rosemary, basil, and oregano to my stock as it cooks to make it a bit more flavorful.
I hope that helps!
Can you eat the beef after?
I usually don’t, beef shank doesn’t have that much meat to begin with and it’s just not appetizing to me. You probably could eat it though. However if you’re using the stove top method and cook it for 4 hrs the histamine levels will be much higher in the meat, so you may not want to eat it.
I Need help . I have severe brain FOG and learning problems .
I have today bought lamb meat . I was told to ise intakt pot due to hisatmin . I cant tolerate any veggies due to severe hisatmin .
If i put the lamb in there how mutch Water ? Also how long cooling time and mood ? Do i have to pre cool meat ore just put it in the pot ?
Did you buy the lamb meat to make bone broth?
If you did and the meat has bones, you can still follow this same recipe. Don’t add veggies if you can’t tolerate them. It will just have less flavor. If you can eat any seasonings, I would add some so the broth has flavor.
You can put the meat in raw.
If you are NOT making bone broth, just cooking lamb to eat, put some olive oil in the pot, add the meat, season with salt or any other flavors you can have, add 1-2 cups of water and cook on high for at least 30 minutes. Check the temperature, it needs to be at least 145 degrees F. Cook longer if needed. I hope that answers your question!
