Oat free granola with nuts, flax, and rice puffs- refined sugar free
I bought my rice puffs here on Amazon
Preheat oven to 350° F. Line a baking sheet with parchment paper.
Put 2 1/2c. rice puffs in a medium size mixing bowl.
Combine oil, syrup, and honey in a liquid measuring cup. Whisk together. Microwave for 30 seconds & whisk vigorously. Then microwave for another 10-30 seconds. It may get to a low boil in the microwave.
Whisk liquid again then pour over rice puffs. Stir to coat evenly.
Chop the pistachios, then add them and the ground flaxseed meal to the rice puffs. Stir to coat evenly.
Spread the "granola" on the baking sheet, then bake for 6 min. NOTE: these rice puffs cook quickly, watch carefully so they don't burn!
Take out and cool for 15 min before eating.
Store in the fridge for a couple days or in the freezer.
I created this "granola" cereal by mistake haha. I was trying to make granola bars but I couldn't get my liquids to work quite right and the ingredients weren't sticking together like granola bars should. So I decided to try eating it with macadamia nut milk, and oh my goodness...DELICIOUS!
Seriously, it's my new favorite cereal. Although Rosie isn't much of a fan. Oh well, someday she might be (and more for me until then 😉 ). I always love eating something different for breakfast than a rice cake with macadamia nut butter, so I hope you enjoy a little variety too!

P.S. I just updated these low histamine gf, df, yeast free cinnamon rolls with an option to use oil instead of DF butter spread. They still taste amazing and now Rosie can eat them too!
