Quick, easy, crispy & delicious low histamine beef tacos
In the microwave or a pot on the stove, warm your cooked ground beef with a little extra water. Add in spices then stir it up.
In a large frying pan pour 1-2 Tb of olive oil and warm on med-high heat. When it's warmed add 2-3 corn tortillas and cook for 3 minutes on each side, or until small brown spots appear. Repeat with remaining tortillas.
Chop lettuce, dice peppers, and wash cilantro.
Assemble your tacos! Take a tortilla, add ground beef, lettuce, peppers, and garnish with cilantro, a drizzle of olive oil & italian seasoning. If you have low histamine salsa pop that on as well.
Tacos- delicious, quick & easy! We love them around here and eat them at least 2 times a week. This is Rosie's favorite *and only* way she likes to eat beef. She insists on having the meat on a tortilla, but she never eats the tortilla, she just picks the meat off of it. Kids are so funny!
Taco hack: When I buy hamburger meat, I usually buy 10 lbs, then cook it all at once and season it with some salt, garlic powder & onion powder. Then I put it into ziploc bags (2 cups in each) and freeze it. When I want to make tacos, which is often, I just pull a bag out of the freezer, warm it in the stove or the microwave, and voila! Tacos in 10 minutes! Or 15, depending on if I have veggies chopped already or not.

I thought Paprika and beef are high histamine?
They are controversial. I follow the SIGHI list which lists fresh beef as a zero, with the warning that histamine levels rise quickly in meat, and it lists sweet paprika as a zero, which is not to be confused with hot or smoked paprika.
Thanks for posting your food journey. Helpful to a family who is using a low histamine diet to support recovery to the bartonella bacteria. I love to cook but I’m new to the low histamine approach to cooking. Your help is very appreciated.
