These tasty tacos are also gluten free and dairy free!

 1 lb ground turkey
 ½ tsp salt
 1 tsp paprika
 1 ½ tsp onion powder
 1 ½ tsp garlic powder
 ½ cup lettuce, shredded
 ¼ white onion
 1 medium zucchini
 1 red pepper
 corn tortillas
Histamine Level: 1
 Rated a 1 due to the garlic. Also dried spices are higher histamine than fresh, so you may want to use minced garlic and minced onion in place of powder.
 Variation: you could also eat this as a lettuce wrap or on top of salad.

Brown ground turkey in a frying pan with seasonings until it reaches 165° F.

Tip: Buy 6 lbs of ground turkey and brown it all at once, then freeze it in sandwich bags for quick use later.

While the turkey cooks, dice zucchini, onion, and pepper. Then shred the lettuce.

Stir fry veggies (except lettuce) in a large frying pan with 1-2 tbsp of olive oil. Cook for 5-7 minutes, stirring occasionally. When they are tender to your liking, put them in a bowl and set aside.

Wipe out the frying pan and pour another 1-2 tbsp of olive oil into it. Over medium heat warm 2-3 corn tortillas in the oil. Cook about 3-4 minutes on each side, or until they get some brown spots. Set tortillas on a paper towel on a plate. Continue with remaining tortillas.

Assemble tacos by starting with turkey, a layer of veggies, and top with shredded lettuce. Drizzle some olive oil over the top and sprinkle some italian seasoning and salt to taste.

We eat tacos a LOT. I buy meat in bulk, prepare & cook it, then freeze it in serving size portions. It makes tacos quick & easy, plus they are delicious! These turkey tacos give us a nice change from beef and they are soooo tasty. Hope you enjoy them!

    I was todl everything ground, meat or chicken is high histamine.

      I follow the SIGHI list and according to it, chicken is not high histamine. However histamine levels in meat do rise quickly, so try to get the most fresh meat you can. As soon as you cook it, eat it, and freeze the leftovers. Ground meat is higher in histamine than fresh whole meat. A low histamine diet is definitely not a one size fits all. Everyone has their own trigger foods and some people may not tolerate meat at all. For my family personally, we tolerate ground meat just fine.

    I was also told no ground meat, especially ground beef. However I can tolerate ground meat. l can even tolerate ground beef. I was using mast cell 360 list. Despite her saying don’t trust other lists due to people customizing to their own sensitivities, I have not found her list accurate for myself. The SIGHI list is more reliable for myself.

    I’m confused. Some lists say no ground beef or turkey and no beef at all. Which is it?

      That’s the really *fun* thing about histamine intolerance. Every list says something different. In the end you have to pick a list that feels right to you, follow it, and see how it goes! I follow the SIGHI list and it doesn’t say anything about ground meats. I’ve been using them successfully for my daughter who has histamine intolerance, but everyone has different tolerance levels. If you’re looking for lowest histamine option when it comes to meat, check out this article from MastCell360. I’ve chosen to do a middle of the road approach when it comes to low histamine, I try to do the best I can with what I have access to & energy for.
