A delicious holiday treat! Like the classic muddy buddies but with a low histamine twist- made without chocolate and with macadamia nut butter instead of peanut butter.

 4 ½ cups rice chex & corn chex mixed
 ¼ cup macadamia nut butter
 1 ½ tbsp honey
 1 ½ tbsp extra light tasting olive oil
 ½ -3/4 c. powdered sugar

Low histamine macadamia nut butter

Add rice and corn chex into a medium size bowl. Set aside.

Whisk together nut butter, oil, and honey in a small saucepan over medium-low heat. Whisk occasionally and then when it starts to simmer, let it simmer for about 20 seconds, then remove from heat. Be careful not to cook for too long because it will burn and if it gets too hot the oil will separate.

Whisk again, then pour mixture over the chex cereal and stir to combine evenly. Then add the powdered sugar and stir to combine evenly.

Put parchment paper on a baking sheet. Spread the chex mix in a flat layer on the baking sheet and refrigerate for about an hour. When it's completely cooled, store in an airtight container in the fridge for a couple days (if it lasts that long :)).

Muddy Buddies are a treat I used to enjoy around the holidays. I had a lot of fun figuring out how to make a low histamine version! They're a bit rich, but sooo tasty. Rosie wasn't a big fan, but that's ok, more for me!
