Super fast and easy pesto sauce that's nut free!

2 tbsp pumpkin seeds
1 cup basil leaves, loosely packed
1 tsp minced garlic
¼ tsp salt
½ cup extra light tasting olive oil

rated a 1 due to garlic. Omit the garlic for histamine level 0.

Combine all ingredients into a blender. Blend on high for 30 sec to a min, or until seeds are completely pulverized and everything is combined evenly. If it's too thick for your taste add more olive oil.

This pesto freezes well. Freeze in serving size containers. Defrost on the counter or in the microwave.
This pumpkin pesto is super easy and it tastes delicious. It's very similar to the pistachio basil pesto. It tastes so good with chicken, gluten free noodles, and sautéed veggies on the side. I make a batch and freeze the extra sauce for an easy dinner for another time.
