These waffles smell AMAZING while they cook. It smells just like Fall.

Wet Ingredients
 ¾ cup water
 ¾ cup macadamia nut milk (or other dairy free milk that you tolerate)
 ¼ cup extra light tasting olive oil
 ½ cup applesauce
 2 tbsp golden or regular flaxseed meal
 1 tbsp maple syrup
 2 tsp vanilla (substitute water if you don't tolerate)
Prep
 1 small apple
Dry Ingredients
 2 cups Gluten free blend (see recipe link below)
 1 ½ tsp cinnamon*
 1 tbsp baking powder
 ½ tsp baking soda
 ½ tsp xanthan gum
 ¼ tsp salt
Histamine Level: 1
 rated a 1 due to vanilla & macadamia nut milk. Substitute water for vanilla & milk for histamine level 0. Or if you are not dairy free, substitute regular milk for mac milk for level 0.
 cinnamon is controversial. SIGHI list has it at a zero in small quantities.

If you use a different blend it may change the final results. 

Wet Ingredients

In a medium size bowl add all wet ingredients: water, milk, oil, applesauce, syrup, flaxseed meal, and vanilla. Whisk by hand until it is well combined (about 30-45 sec).

Set aside while you prep the apple.

Peel apple then slice up and remove core. Place in a food processor and chop until it is finely diced. Set aside in fridge for later.

Dry Ingredients

Add all dry ingredients to a large mixing bowl : gf flour, cinnamon, baking powder, baking soda, xanthan, and salt. Whisk together until it's fully blended.

Slowly pour wet ingredients into the dry while whisking the batter. Or pour a small amount, whisk, pour some more, whisk, etc. Mix until combined. The batter will be fairly thick.

Stir in diced apple.

Preheat your waffle maker. When it's ready, spray with cooking oil. I tried brushing mine with olive oil and it did NOT work, the waffle got completely stuck to the iron. I had to use a cooking spray instead (I normally try to avoid it because I can't find one without soy lecithin).

Add enough batter to fill the waffle iron, then close and cook according to your waffle maker instructions. Mine took about 6-7 minutes to fully cook.

Open up the iron, use a fork to remove the waffle and place it inside a folded up towel. Repeat with remaining batter. Then feast!

If you have any extra, these freeze and reheat well.

I am so thrilled that I found Gwen's recipes, she has some amazing GF & vegan options, you should definitely check them out. The blend she uses isn't low histamine because it contains garbanzo beans, but the gf blend I used for this recipe has worked well for me with her other recipes. 

These waffles are delicious and they smell so good. You will not regret making them! It's totally worth the hassle of cleaning the waffle iron (which is like my least favorite job). I hope you enjoy them as much as we do!

You can also pair these waffles with chicken sausage patties to get some extra protein in the morning.

    Oat milk for macadamia
    Chia seeds ground in coffee grinder for flaxseed meal
    Corn starch for xanthan gum
    I left out cinnamon because we were out but found some maple sugar/cinnamon I had made up in the pantry and sprinkled that on top.

    And wanted to share I used Chosen Foods avocado oil spray and it worked pretty good. Let iron cool a bit between waffles and it will seem to stick but was easily removed with a fork after loosening edges.
    So delicious!!! Thank you for sharing!!
