Put all ingredients in a pint size mason jar or bowl. Blend with an immersion blender until it emulsifies and thickens (only takes a minute or two).
You can use a regular blender if you don't have an immersion blender.
Store in the refrigerator for up to 1 week.
Note: If you tolerate lemon juice you can add 1/4 tsp to the mayo. The taste isn't that different with or without it.

Isn’t vinegar a histamine-rich item?
Yes, most kinds are and it depends on the list you follow. The SIGHI list that I follow lists distilled white vinegar as a level 0 histamine.
Thank you for the recipe! Wondering if you’ve tried this with brown rice flour? (or any other kind of low histamine/gluten free flour). I’m having trouble finding white rice flour.
I haven’t tried it with brown rice flour. It’s worth a try! It will probably just have a slightly different flavor and you may need to add a 1/2-1 tsp more water.

Hi! Like everyone else – I am SO thankful for all your recipes!! Quick question for you. I don’t have xanthan gum, because I use Bobs 1-1 flour in most recipes. Do you have any clue if this recipe would work with 3 1/4tsp of bobs 1-1 flour, instead of the rice flour, corn starch and xanthan gum? Thanks so much!!
I think that could totally work and is worth a try! The rice flour, cornstarch, and xanthan gum is for thickening and emulsifying the mayo, and you have the rice flour, starch, and gum in the flour blend, so it seems like it will be successful. Let me know how it turns out!
Unfortunately, it didn’t work. After blending for 5 minutes, it only emulsified to a consistency of a heavy whipping cream. I added more flour to see if it would work, but it never got thick enough to be close to a mayonnaise , and it tasted floury. I’ll just head to the store and add rice flour and xanthin gum to my list!

My mayo failed to emulsify. I put all ingredients in my immersion container in the order in its listed in the recipe. I measured carefully and used my immersion blender but it was a liquid. Could it have been the temperature of my water? Everything else was at room temperature. Have you ever have this recipe fail?

I am new to histamine intolerance but believe myself and my daughter have had it for a long time. She is now 3. I have tried so many different diets and healing modalities with some relief. I am hoping this will help. I was so overwhelmed with this diet and how to begin. Knowing that you are also a busy mom helps me feel I am not alone. I have IBS I cannot have xanthan gum – what do you suggest?
Here’s an article that suggests substitutions for xanthan gum. I would personally try the arrowroot flour/powder/starch.
