Halloween & the holidays are right around the corner. Which means candy is EVERYWHERE. The good news is, you can serve lots of other delicious foods that are not candy. For ideas see this post.

But if you are just craving some chocolate but don’t want to raise your histamine levels, check this out!

You can make low histamine white chocolate. According to the SIGHI list, cocoa butter is rated a level 0. As far as I can tell Cacao butter is a little different than cocoa butter, but cacao butter is what other low histamine bloggers (MastCell 360 & histaminefriendlykitchen) have used to make low histamine white chocolate.

So I decided to give it a try!

I found an amazing gluten free & vegan recipe for white chocolate from Gluten Free on a shoestring.

The only adjustment needed to make it low histamine is to use macadamia nut butter instead of cashew butter. It made about 36 chocolates. I chopped some of them up to make chocolate “chips” and froze the rest. They’ve been in the freezer for about a month and are starting to have a little bit of a frost bite smell, so I’m not sure how well they’ll keep in there.

It’s very very rich, epecially since I haven’t eaten chocolate for a couple years. It reminds me of dark chocolate and it is really good.
