Easy & tasty fajita rice bowl.
Low Histamine Fajita Seasoning
Pour olive oil in a skillet on medium heat. When heated, add onions and peppers and saute for 2-3 min.
Add cooked chicken and stir. Add fajita seasoning and 1 TB of water or oil. Stir in seasoning and let simmer with lid for 3 min.
Serve over rice and garnish with cilantro.
This is a simple dinner and quick to throw together, especially if you have rice in the freezer. I put my frozen chicken in the slow cooker around noon and then cubed/shredded it and tossed it in the pan with the veggies and seasoned it. Hooray for easy meals! Or to make it even easier, use a rotisserie chicken (but make sure it isn't seasoned with pepper or lemon or BBQ sauce). Costco rotisserie chickens are the only ones I've tried since doing the low histamine diet.
