This is a quick and flavor-filled dinner. Chicken thighs make it extra moist and it pairs well with rice.

Yields: 4 servings

 4 Chicken thighs
 ¼ cup Olive oil
 ¼ cup Honey
 2 tbsp Cilantro leaves chopped
 1 Head of broccoli
 1 cup Baby carrots
 ½ White onion, chopped

Place thawed chicken thighs in a greased baking dish. Preheat oven to 400° F.

Combine honey, oil, and cilantro in measuring cup with a whisk.

Pour honey mixture over the chicken thighs and place in the oven. Bake for 15-25 min or until chicken reaches 165° F.

While the chicken cooks, wash and chop veggies. Toss them with olive oil, salt, garlic powder, and onion powder. Place them on a cookie sheet covered with parchment paper. Roast in the oven at 400° for 10-15 min, or until the tops are slightly browned and veggies are tender.

    I’m so confused. I thought cilantro was considered high histamine.

      I follow the SIGHI food list and it rates cilantro as a level 0, but only small amounts of it are tolerated well. Every list is different! If you know cilantro doesn’t work for you, then I would leave it out.
