Low histamine white chocolate-vegan, gf
Dice your white chocolate finely, then measure out 1 1/2 TB of it. (When I make the white chocolate I chop up a few pieces to use as chocolate chips & then freeze it, so I just use those).
Combine all ingredients into a small saucepan. Simmer over low heat, stirring occasionally, until your white chocolate pieces have melted.
Serve warm & enjoy!

The cold winter season is upon us and it has snowed a few times here. My 2 big kids love having hot cocoa after playing in the snow. Usually Rosie doesn't really pay attention to what they eat, but the older she gets the more interested and insistent she is on having what "the kids" are having. Since we had already made white chocolate and she tolerates that pretty well, I went on the hunt for a white hot chocolate recipe (fun fact, this is sometimes called unicorn hot chocolate). It took a bit of searching to find one that didn't use full-fat coconut milk, but we did!
She was SO excited to have her own "unicorn cocoa" to drink. She only had a few sips, but it was worth the effort for her to feel included. I had my own little glass, and let me tell you, this stuff is good but it is RICH! One sip was about all I could take 😆. Honestly, I've never been a big fan of hot chocolate, it's always been a bit too rich for me. I'm all about the baked goods myself. Chocolate & candy usually gave me a headache, even before all this dairy free & low histamine stuff.
However, I imagine there are a few of you out there like my husband, who LOVE rich & creamy desserts, so this one is for you friends!
