I’ve been really happy with the gluten free flour blends that I’ve found. Today I want to share my favorites with you, along with the type of baking I use them for.

You can buy some store bought blends that are also low histamine (see bottom of post), but I prefer to make my own because it’s a bit cheaper, and I have tried & true blends I love.

If I’m making a recipe that’s already GF, I usually try to use whatever gf blend they used or recommend. If I don’t have the same one or it doesn’t work for low histamine, I use one of the blends below. If I’m modifying a recipe from wheat to gluten free, I also use these blends.

Experimenting with recipes is always an adventure. Most of the time it turns out good or even great! And sometimes it turns out AWFUL. And that’s ok. Because I learn so much every time a recipe bombs. I don’t make it mean anything about my ability to bake or create, I just think “ok, now I know what NOT to do next time!”. I encourage you to try thinking the same way about your baking mishaps.

Basic Everyday Flour Blend

Petite Allergy Treats- Basic white gf flour

This is the flour I use ALL the time. It’s a staple for me and I try to always have a batch mixed up. I use it in the majority of the recipes on my website. If I’m modifying a muffin, cookie, or pizza crust recipe to GF, I use this blend. It has been AMAZING! I’ve had very few failures with it.

Cake Flour Blend

GF Deliciously- Cake flour blend

When I want to modify a cake/cupcake recipe, I use this blend. Especially if it’s a vanilla cake recipe. I don’t know the science behind how gf flour works, but I think this blend works better for cakes because it has equal amounts of starch to rice flour.

Pastry Flour Blend

I’ve had the best luck with pastries using Sarah’s flour blend below. The best pie crust I’ve made was her pumpkin pie crust, and the vegan pop tarts with brown sugar filling turned out amazing!

    • This recipe is great if you want low histamine & YEAST FREE. I just leave the spices out when I make them.

Store Bought Blends

Most GF recipes list what kind of gf blend they used to make the recipe. If the recipe is store bought, here are some ingredients you need to look out for to see if it’s low histamine.

  • chickpea flour or garbanzo bean flour- rated a level 2 histamine
  • pea protein- rated a level 1 histamine

Measuring GF Flour

Most people recommend spooning the flour into a measuring cup & then scraping the top with a knife. I however, am a lazy baker (or efficient, whatever you want to call it 😆), and I just fluff up my flour blend with my measuring cup and then scoop it out of the bucket and shake it off until it’s level. So if you’re making one of my recipes, use that method. My recipes don’t turn out the same every time, but they still taste delicious, and that’s the kind of baker I am.
