Crunchy tasty potatoes
Serving: 1-2 people
Clean the potato. Then slice into thin rounds (about 1/2cm thick). Then cut the rounds into quarters.
Add potatoes, olive oil, & seasonings to a small bowl and toss to coat.
Put potatoes in air fryer basket and cook for 8-10 minutes at 390°F, on Air Fry mode.
Toss the potatoes and cook for another 10 minutes or until slightly brown and crispy. If you like really crunchy potatoes cook for another 5 minutes after that.
If you double or triple this recipe, you will need to increase the cooking time by at least 10 minutes.
We try to get creative with names for our potatoes because Rosie is more interested if it has a new name. So we call these little diced potatoes "Crunchy Potato Bites". Now Rosie likes her potatoes SUPER crunchy, so I usually cook hers for an extra couple of minutes, since I prefer mine soft & tender.
If you don't have an air fryer, you can cook these in the oven at 400°F, it will just take about 30-40 minutes instead of 20.
These are great as a side dish to steak or chicken & veggies, or to go along with waffles or pancakes and sausage.
